Scottish salmon shows up everywhere in Florida — on restaurant menus, at seafood markets, and in home kitchens. It's one of the most widely farmed Atlantic salmon products in the world. Scotland leads the way in producing Atlantic salmon, with aquaculture supporting local economies, providing jobs in coastal communities, and contributing significantly to the global seafood market.

If you live in Florida, knowing how Scottish salmon is farmed helps you make smarter, healthier seafood choices. This article explores how Scottish salmon is farmed, its health and nutritional benefits, and the economic and community impact of this iconic seafood.

Scottish farming

Scottish salmon farms carefully manage feeding to keep fish healthy and protect nearby waters. Farmers feed salmon a balanced diet rich in protein and essential nutrients. This careful approach not only ensures the fish are healthy and safe for consumption but also helps reduce waste in surrounding waters, making farmed salmon a more sustainable choice for consumers.

The Scottish salmon industry is highly regulated and monitored, with certifications such as the Aquaculture Stewardship Council (ASC) ensuring farms meet strict environmental, social, and animal welfare standards. These certifications help Floridians and other consumers choose responsibly farmed salmon, supporting sustainable practices and the long-term health of the industry. By selecting certified products, buyers can enjoy high-quality Scottish salmon while knowing they are making an environmentally conscious choice. (seafoodwatch.org)

Health Benefits

Scottish salmon delivers high-quality protein that helps maintain muscle and daily energy. It's also packed with omega-3s. These fats support heart health, brain function, and help reduce inflammation. Additionally, it contains important vitamins and minerals, including vitamin D, B vitamins, selenium, and potassium, making it a practical choice for health-conscious consumers in Florida and beyond. Choosing responsibly farmed Scottish salmon means you get all the health benefits without worrying about the impact on the environment. By opting for certified or sustainably sourced salmon, Floridians can enjoy a nutritious seafood option while supporting farms that prioritize fish welfare, water quality, and long-term sustainability. It's a simple way to make a choice that's good for both you and the planet.

Economic and Community Importance

Salmon farms support thousands of families in Scotland's coastal towns. Beyond employment, the industry helps maintain the vitality of small towns and rural areas by supporting infrastructure and economic stability. When Floridians choose responsibly farmed salmon, they directly support these communities. (bestfishes.org.uk)

The industry also implores environmental and social responsibility. Certifications like the Aquaculture Stewardship Council (ASC) ensure farms meet strict standards for fish welfare, environmental protection, and community impact. By selecting certified Scottish salmon, consumers in Florida can enjoy high-quality seafood while supporting an industry that balances economic growth with sustainability and the health of local communities. How long are the Stone Crab claws good for after I receive the box?

If you place them in the refrigerator after receiving them, they will be good for 3-5 days. If they go directly into the freezer, they can be saved for months. Think of them like any other frozen seafood item.

Can I leave my Stone Crab in the shipping box overnight once I receive it?

We do not recommend leaving the crab in the box once you receive it. Stone crab claws require open air to maintain freshness. If they are in an enclosed box/bag for over 48 hours, the claws will become acidic smelling. We recommend storing the claws in the refrigerator in the open air or the crisper drawer.

Are the Stone Crab scored or pre-cracked?

No. We do not recommend scoring or pre-cracking stone crab claws, as the meat tends to dry out quickly once cracked.

How many claws do I get per pound?

This depends on the size of the claw. For a more detailed visual look, click here.

Medium claws: 6-7 per pound

Large claws: 4-5 per pound

Jumbo claws: 3 per pound

Colossal: 2 per pound

Mega Colossal: 1 per pound <- These guys are HUGE!!

How do I thaw frozen Stone Crab claws?

SALTWATER THAWING BRINE:

You are looking for a ratio of about one-half cups of salt to one gallon of water. Put the container in your fridge or, if you don’t have room in your fridge, use ice bags to keep it cool. Keep in solution overnight for a fresh, just out of the water, taste!

Are the Stone Crab fresh or frozen?

This answer depends on the time of year that they are purchased. At Frenchy’s Seafood Market, our goal is to provide the freshest seafood possible. During the off-season, it is common for us to “Fresh Freeze” the crab after cooking to ensure freshness and preserve the already cooked meat. For thawing instructions, see “How do I thaw frozen Stone Crab claws?”

How do you open Stone Crabs?

There are several options for opening stone crab claws. If you click HERE you will find our stone crab cracker. This is an industrial-strength cracker, which assists in opening the toughest shells! This cracker is best used for large quantities of stone crab claws. For smaller amounts, you can simply use the handle of a butter knife to open them. Use this with the same force that one would use to hit a nail with a hammer. Take care not to over crack the claws, as this will cause the shells to become embedded in the claw meat. For the ultimate culinary experience, read our stone crab serving guide for a more in-depth look!

Should I heat my claws or eat them cold?

Stone crab claws are similar to shrimp. Some people prefer them cold and dipped in mustard, while others prefer them heated. If you heat them, a quick dip (no more than a minute) in boiling water will bring them up to temperature! If still not sure, check out our stone crab preparation guide!

Are the Stone Crab cooked?

Yes, Stone Crab are cooked as soon as they are taken off the boats to ensure that the meat does not stick to the shell!

What is the season for Stone Crabs?

The season begins on October 15 and ends on May 1. During the summer months, we offer a superior quality Stone, frozen at the peak of freshness and arrives at your door ready to eat. For more information check out our Stone Crab Season Guide.
